my easy frittata formula
there can sometimes be days or weeks where i find myself running short on time, money, or the energy to spend hours cooking. it’s also easy to think that not having enough of these things means you have to eat something boring or unhealthy (like mi goreng…yum) not the case! this is something delicious that i whip up for anders and i most weeks, and one batch is a couple of days lunch sorted in no time at all.
i created an easy formula for myself to keep it consistent and tasty using seasonal produce. it’s simple and works perfectly every time. no shopping list. no long list of steps. anders loves them! they’re actually really fun to put together and are easy for us to take out on a busy day and snack on without having to heat up. depending on your flavour combination, they can sometimes end up tasting like pizza :o :o
THE FORMULA (4 serves)
- 6 ORGANIC FREE RANGE EGGS
- 2-3 TYPES OF VEGETABLES - today is broccoli, sweet potato and heirloom tomatoes
- 1 FRESH HERB - todays is basil
- 1 JUICE OF A WHOLE LEMON
- CHEESE OF YOUR CHOICE - today is buffalo halloumi from the markets
1 / preheat over to 200 degrees celsius. season veggies with salt, pepper, lemon zest and any herbs or spices you want, then spray with coconut oil. roast for about half an hour or so until they become golden
2 / once roasted, layer them into a frittata baking dish with parchment paper in it (i attempt to make a pretty pattern) then add your fresh herbs on top
3 / whisk your 6 eggs, lemon juice, salt and pepper, i will sometimes add some dried chilli flakes or oregano, basil, paprika etc depending on the vibe i’m going for and pour on top of your veggies and herbs
4 / add cheese on top and bake for about 30-40 minutes, until cheese is golden

- sweet potato, zucchini with basil and parmesan
- mushroom, broccoli, sun-dried tomatoes, thyme and cheddar cheese
- spinach, peas, goats cheese and fresh mint
- pumpkin, kale, ricotta and sage
