carottes râpées with toasted pistachios
i was recently out at one of my favorite restaurants in nyc buvette and i noticed they a had carottes râpées (grated carrot salad) with toasted pistachios on the menu! i got so excited when i saw it, i said to anders “hey! i ate that salad all the time growing up!” he didn’t seem too phased. haha. i was honestly obsessed with it. it’s easy to prepare. salty, sweet, crisp, citrusy and refreshing. it was the perfect summer food after a day at the beach.
as well as being delicious, carrots are a beauty food as they’re a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. beta carotene converts to vitamin A in the body which is amazing for your skin, eyes and more.
this salad is great as a healthy side, to pack with a picnic, or keep in the fridge for an afternoon snack when you’re feeling peckish.
these are the basic ingredients. try and find the best organic, fresh carrots from your local farmers market. measurements are an estimation because i mostly eyeball when making this salad. you can add less or more of anything to suit your taste buds.
half a bunch of fresh flat leaf parsley roughly chopped
the juice of two lemons
3 tbsp of olive oil
salt and pepper to taste
1/4 cup of shelled unsalted pistachios
toast pistachios in a preheated oven for about 5 minutes. wash, peel and grate carrots into a large bowl. i use the finest part of the grater or you could use a food processor if you have one.
then in a jar, add the lemon juice, olive oil, salt and pepper. lid on and shake! test the dressing and adjust flavours as needed. when ready to serve pour the dressing over carrots, parsley and pistachios and toss.
