creamy moules marinière with quinoa spaghetti

i fell hard for moules aka mussels when i was travelling through the french riviera. everywhere you go is "moules frites" which i talked about in my nice post. i originally wanted to make moules frites to honor this love of mine, but realised i have never and probably will never make french fries as much as i love them? so i thought i'd do a moules marinière spaghetti instead. 

this is my ultimate summer dish. it tastes like the ocean. have it with a crisp glass of white wine outside after a day by the beach. i like to use organic rice/quinoa spaghetti but you can use any pasta your heart desires and you could also still make them with french fries or simply serve with fresh crusty baguette to mop up the creamy, winey goodness.

THE HEALTH BENEFITS OF MUSSELS

not only are mussels delicious, affordable and sustainable but they are also super nutritious. a good source of protein, vitamin A, selenium, b12, iron, omega 3's and zinc (hello good skin). always make sure you get the best quality mussels you can find, preferably from your local fish market, it makes all the difference.

INGREDIENTS (serves 2-4)

  • 1 kg mussels (i get these ones. they are amazing quality, washed and ready to go)
  • a knob of butter
  • 4 cloves of crushed garlic
  • 4 shallots finely chopped
  • 1 red chilli finely chopped (optional)
  • 1 tbs of lemon zest
  • 2 cups of a dry white wine (i use muscadet)
  • a bunch of fresh parsley
  • 1 packet of the spaghetti of your choice (i use this one)
  • 1/2 cup of cream
  • salt and pepper to taste

METHOD

1 /   add butter, shallots, garlic, chilli, chopped parsley stalks (leaves come later), lemon zest and pepper into a big pot on medium heat and soften for a minute or two. meanwhile in another pot cook your spaghetti

2 /   add wine to the butter and let simmer for another minute or two. then add your mussels and stir, then turn heat up and put lid on to let steam for about 3-4 minutes (i put a timer on so i do not over cook them)

3 /   once mussels are cooked, you'll know because they open up. discard the ones that do not open and add in cream, fresh parsley and cooked spaghetti. mix and serve with more fresh pepper and lemon cheeks <3

* notes

  • do not add any salt until the end as the mussels are already quite salty and it rarely needs any extra
  • when heating the butter, it's important to not brown or burn it, so make sure heat is on medium and i like to add a little splash of olive oil 
  • when serving the dish have a big spare bowl at the table for all the mussel shells and plenty of serviettes
  • whoever you cook this for will be forever in your debt and love you more than anything
