detoxifying ayurvedic kitchari

my parents met while living in india where they both learnt how to cook a lot of delicious and authentic indian cuisine. this resulted in my brothers and i growing up vegetarian with a lot of fresh indian feasts on a regular basis. one of the staple meals we ate growing up was kitchari.

WHAT IS KITCHARI

kitchari is an ayurvedic detox porridge dish made with rice, mung dahl, various spices, ghee and vegetables. i would compare it to india's version of congee (which i'm also very passionate about). it is nourishing and according to ayurveda is great for digestion, cleansing and overall health and wellbeing. it has been used for centuries to help nourish babies, the sick and elderly. 

with the new year here, i've been on a kind of ayurvedic anti inflammatory detox and health regimen with mum. one of the main components is having 1-2 bowls of kitchari with steamed greens every day. this recipe is a very healthy and simplified version. it is so delicious and tasty and to this day the one thing we always ask mum to cook us when we see her.

INGREDIENTS (for 1 big pot 6-8 portions)

  • 1 1/2 cups of mung dhal
  • 1/2 cup of basmati rice
  • 2 cups cauliflower cut into pieces
  • 1 whole silverbeet wash and cut up
  • 2 tomatoes diced
  • 3 tbs ghee (my homemade recipe is here)
  • 1-2 tsp of himalayan salt and pepper
  • 1 tsp turmeric powder (anti-inflammatory, antidepressant, improves digestion, anti-aging)
  • 1 tsp fenugreek powder (anti-inflammatory, improves digestion, improves exercise performance, promotes healthy hair)
  • 1 tsp aniseed powder (diuretic, improves digestion, kills bacteria, parasites and fungus in the gut, boosts metabolism)
  • 1 tbs fresh ginger
  • 2 cloves of garlic crushed
  • fresh coriander, lime, chilli, ghee, THIS mango pickle, and sheeps or goats yogurt for garnish

METHOD

1 /   add rice and dhal into a big pot and thoroughly clean, filling the pot with water, rinse, empty and repeat about 4 times until water runs clear. then add 2.5 litres of water and turmeric and bring to a boil, then turn heat to medium and let simmer for 20 minutes

2 /   add cauliflower and let cook for another 10 minutes stirring in between, then add silverbeet and tomato for another 10 minutes

3 /   meanwhile in another little pan or pot add ghee, ginger, garlic, chilli, fenugreek and aniseed and bring to a bubble and let heat up for about 10 - 20 seconds until fragrant (do not golden or burn!) and take immediately off heat and set aside. once veggies have cooked and the kitchari is a porridge consistency, pour in the ghee and spice mixture and stir. then season with salt and pepper to taste

4 /   to serve add yoghurt, fresh chilli, lime juice, mango pickle, coriander and drizzle a little more ghee

** notes

  • only add salt and pepper at the end
  • try where you can to get all organic/local produce and spices to feel the full health benefits
  • do not burn or golden your garlic and ginger in the ghee, you only want to get it very hot and fragrant
  • you can use whatever vegetables you like. these were just the ones i had in the fridge. i also love peas, potato, okra and spinach. get creative :)
