easy paleo bread

it’s currently a crisp fall afternoon in brooklyn. the first day i’ve worn boots and a jacket for a long while! i love this time of year. one of the best things about living in new york is the change of season. i did an early morning shop at trader joe’s and picked up some ingredients for the weekend, a few new plants and 3 big bunches of eucalyptus (they’re only $2.90 a bunch, i can’t help myself) and some vanilla, pumpkin spice candles just because you do crazy things when you’re in trader joe’s..

i really felt like making bread today. so i made this paleo-friendly loaf. it turned out really well, so i thought i’d take some quick pictures and share the recipe. i’m hoping i can start getting posts up on a more regular basis. something about new york is so distracting. i think the pace of the city has given me ADHD.

INGREDIENTS (1 loaf)

  • 1 2/3 cup almond flour

  • 1/4 cup ground flaxseed

  • 1/4 cup pumpkin seeds

  • 1 tsp sea salt

  • 1 1/2 tsp of baking soda

  • 5 eggs

  • 1/4 cup olive oil

  • 1 tbsp maple syrup

  • 1 tbsp of apple cider vinegar

METHOD

preheat oven to 350° F. add all dry ingredients into a large bowl and mix well with a whisk. in a separate bowl add wet ingredients and whisk until combined. add wet ingredients into the dry, and stir until combined. pour batter into a lined bread tin and sprinkle with more pumpkin and flaxseeds on top. bake for 40 minutes.
