japanese sweet potato and wild salmon patties (paleo + whole 30)

this is a weeknight staple in our house at the moment. they are super healthy, easy and affordable to make (especially if you use canned wild salmon). i'll serve them with sauteed silverbeet, lemon, garlic and peas and some of my walnut pesto or a garlic aioli with lemon zest!

to me, these are the ultimate beauty food because the wild salmon and japanese sweet potatoes are full of healthy omegas, antioxidants, vitamins and minerals which contribute to glowing skin and shiny hair.

INGREDIENTS (12 patties)

  • 3 cups of mashed japanese sweet potato (i like to leave the skin on - extra nutrients)

  • 800 grams of canned or fresh wild salmon

  • 2 eggs

  • 1 tbsp chilli flakes (optional)

  • 1/2 cup fresh chopped herbs of your choice (thyme, basil, chives, dill and parsley work well)

  • 2 cloves garlic minced

  • zest of 1 lemon

  • anchovies finely sliced (optional)

  • salt and pepper to taste

  • ghee or coconut oil for cooking

METHOD

preheat oven to 240C. combine all ingredients in a bowl and roll into patties. lay them out on a baking tray with lined with parchment paper and bake in the oven for 30 minutes. finish by browning in a pan with a little ghee or oil of choice. garnish with flakey maldon salt, herbs, fresh lemon and lemon zest. serve with fresh salad and garlic aioli!
