raw chocolate + maca truffles (paleo + vegan + whole30)

this recipe is my favorite sweet treat to make these days. these chocolate truffles are rich, fudgy, healthy, EASY and kind of addicting. they’re a healthy alternative during that time of the month when i get chocolate cravings, full of nutrient and antioxidant rich cacao, dates, walnuts and i and organic maca powder for energy, mood and hormone support. INGREDIENTS (14 truffles)

  • 1 1/2 cups raw walnuts

  • 1 cup (about 10) medjool dates pitted

  • 1/4 cup cocoa powder plus extra for coating

  • 1 tbsp maca powder

  • a pinch of flakey salt like maldon or pink himalayan

  • 2 tbsp vanilla almond milk

METHOD

1 / in a food processor or blender grind the walnuts into a fine meal.

2 / add in the rest of the ingredients, and process again until a sticky, uniform dough is formed (you may need to add more liquid and stop and mix with a wooden spoon or spatula in between pulses).

3 / with wet hands form balls with the mixture, then roll on a plate to coat with cacao powder. then place them in a tupperware with a lid in the fridge and enjoy cold.

they pair perfectly with fresh strawberries <3 anders will literally eat a whole batch of these in one go.
