roasted cauliflower and garlic hummus (whole 30 + paleo)
(sorry about the lower quality photos for this post. my camera SD card decided to die/break and these are the photos i could kind of salvage so the quality is not the best)
this is a really good substitute for a classic hummus if you don’t eat chickpeas.
1 large cauliflower (cut into florets)
4 tbsp of olive oil
3 tbsp of tahini
2 tbsp water
juice and zest from 1 lemon
2 garlic cloves
1/4 tsp salt and pepper to taste
1/4 tsp ground cumin
pinch of ground coriander
roast cauliflower florets in an oven preheated to 400 degrees fahrenheit with a little olive oil, salt and pepper until golden. add roasted cauliflower into a blender or food processor with the rest of the ingredients and blend until smooth. taste and add more salt, pepper, olive oil, lemon juice etc if needed.
garnish with fresh parsley, olive oil and toasted sunflower seeds :)
