herbes de provence super seed crackers (vegan + paleo)
the other day i made a trip to one of my favorite australian grocery spots, the source bulk foods and bought a whole bunch of seeds to make my own version of mary's gone crackers.
they actually turned out pretty good so i thought i'd share on here. i've been enjoying these with some manchego and veggies for lunch and snacks during the week. so good!
i used herbes de provence to flavor this batch but i'm going to experiment with some different combinations next time. like parmesan, pepper, seaweed, basil and garlic, olives, rosemary etc.
- 1/2 cup sunflower seeds
- 1/4 cup flaxseed (linseed)
- 1/2 cup of hemp seeds
- 1/2 cup chia seeds
- 3/4 cup pumpkin seeds
- 1/2 cup sesame seeds
- 1 tsp salt and pepper
- 1 tbsp of herbes de provence
- 1 tsp garlic powder
- 1 tsp chilli flakes
- 1 1/2 cups water
1 / preheat oven to 170 degrees celsius
2 / mix all ingredients together and leave for 10-15 minutes for the seeds to soak up the water
3 / give everything a good stir, then split the mixture over two lined baking trays and spread thinly with a rubber spatula. the ideal thickness is about 3-4mm. too thin and the crackers will be very fragile, too thick and they'll be more like a seed cookie than a cracker
4 / bake for about 40-50 minutes (depending on your oven) until golden brown and crisp
5 / remove from the oven, allow to cool, then break into irregular shards and enjoy with your favorite toppings
